Now that you have your ingredients, let’s get started with the recipe.
Step 1: Boil the pork belly
In a pot, add the sliced pork belly and enough water to cover it. Bring it to a boil and let it simmer for 5-10 minutes until the pork is tender. Skim off the scum that rises to the surface to make the broth clear.
Step 2: Add the vegetables
Once the pork is tender, add the sliced onions and tomatoes. Let it simmer for another 5-7 minutes until the vegetables are cooked.
Step 3: Add the tamarind mix
Add the tamarind mix to the pot and stir well. Let it simmer for another 3-5 minutes.
Step 4: Add the kangkong and green chili
Add the kangkong and green chili to the pot and let it cook for another 1-2 minutes until the kangkong is wilted.
Step 5: Season with salt and pepper
Finally, season the Sinigang na Baboy with salt and pepper to taste. Serve hot with steamed rice.
